We had such a fun night last night! It was Issa's turn to cook, and she opted to make naan, tzatziki, and hummus. (We know we mixed some cultures there, but it was a great combo!) Brad hasn't had naan since his celiac diagnosis, so he was beyond excited, and the recipe was one of the easiest we have attempted lately. This is just such an Issa moment:
We were waiting for her yeast to bubble, and I think she was trying to get them to "show up to the party."
The dough doesn't have to rise, so as soon as it came together, she rolled golf ball sized pieces of dough into circles:
Then though go into a skillet with just a tiny bit of coconut oil for less than a minute per side:They puffed up so nicely, and they were absolutely delicious!
After dinner, we took a lovely evening walk, and one of our neighbors let us know the space station would be flying right over our neighborhood at 9:05. About 9:00, we headed outside. We had no idea what we were looking for, but then right at 9:05 this perfect orange triangle of light appeared. It was moving faster than a plane, but it wasn't so fast that you couldn't track it across the sky. It probably took about three minutes to go all the way across the night sky, but it was so cool. We had watched the space shuttle launch last weekend, so knowing that those two men were up there was truly amazing.
We have committed to doing more stargazing this summer, and I can't wait!
